Falafel
- ¼ cup breadcrumbs
- ¼ cup chopped cilantro
- ½ tbsp ground cumin
- ½ tsp salt
- ¼ tsp ground red pepper
- 2 cloves garlic, crushed
- 1 large egg
- 15 oz canned chickpeas
- 1 tbsp olive oil
Sauce
- ½ cup yogurt
- 2 tbsp lemon juice
- 2 tbsp tahini paste (or 2 tbsp ground sesame seeds and ¼ tsp salt)
- 2 cloves garlic, minced
For sandwiches
- pitas
- lettuce
- tomatoes, sliced
Process the first 8 ingredients in a food processor until smooth. Divide into 16 portions, and shape each into a patty. Cook on medium-high heat 5 minutes on a side or until brown.
Prepare sauce by mixing everything.
Spread sauce in pitas and stuff with lettuce, tomatoes, and falafel.
