- 1 lb pasta, something small
- 1 cup cooked corn
- 1 can black beans, drained
- 1 red bell pepper, diced
- 1 jalapeno pepper, finely chopped
- half a cup chopped cilantro
- 3 green onions, chopped
- dried basil
- garlic
- salt
- chipotle powder
- cayenne pepper
- chili powder
- cumin (use sparingly)
- fresh ground pepper
- juice of 1-2 limes
Cook pasta. Mix all ingredients. Most are optional.
