From Cooking Light
Ingredients:
- 3 tbsp lime juice
- 3 tbsp rice vinegar
- 2 tbsp fish sauce
- 1 tbsp water
- 1 tbsp creamy peanut butter
- 1 clove garlic, minced
- 6 cups shredded napa cabbage
- 1 cup red bell pepper strips
- 1 cup shredded carrot
- 2 tbsp chopped roasted peanuts
- 1 tbsp chopped cilantro
Whisk together first 7 ingredients in a large bowl. Add vegetables and toss
to coat. Cover and marinate in fridge for 1 hour. Stir in peanuts and cilantro
just before serving.
