Note: this recipe assumes you have a big KitchenAid stand mixer
Ingredients:
- 1 package yeast
- 1 cup milk
- 3 tbsp butter
- 2 tbsp sugar
- 3 cups flour
- 2 tsp salt
- 1 egg white
Melt the butter with the milk in a saucepan over low heat (target temperature is about 110°F). Pour the melted butter-milk mixture into the mixer's bowl and add the yeast and sugar. Let this sit for three minutes; if there's no foam and no yeasty smell, the yeast is probably bad. Slowly add the flour with the mixer on low; when the dough starts to form, increase the speed to medium and add the salt and one egg white. Let this mix for about 10 minutes, then knead the dough for about a minute. Put the dough in a large bowl greased with olive oil, cover with a damp towel, and let the dough rise for 45 minutes.
Once the dough finishes rising, shape it into a loaf by patting it into a rectangle, folding the long sides in, then folding the ends under. Pinch everything shut and put the loaf in a greased pan. Cover the pan with plastic wrap and let the dough rise for 20 minutes. Slash the top of the loaf with a sharp knife, then bake at 350°F for 30-40 minutes (until the crust is a golden brown). If possible, bake some boiling water along with the bread; this should make for a better crust.
